The husband and wife team of Stan and Mailo Power have restored a 17th century Georgian home, with beautiful views of the River Suir and downtown Waterford, and turned it into a beautiful place to stay, complete with four suites and 25 rooms, many of which are named after famous people such as James Joyce or John Lennon.
Although the hotel has an historic feel, the rooms feature all the modern conveniences guests could want, such as flat-screen televisions, CD players, broadband access, hair-dryers and coffee-and-tea facilities.
The different suites include features such as a freestanding cast-iron bathtub, a lounge area, a Jacuzzi bathtub or a four-poster bed.
Irish Recipes With a Modern Twist
Guests have the option of having breakfast, lunch or dinner right on the property at Zak’s Restaurant. The locally sourced, seasonal menu specializes in taking traditional Irish dishes and giving them a modern twist. For example, start with a salad featuring Waterford-reared lamb shoulder roulade, paired with pickled walnuts, move on to Irish pork presented in three different ways and served on a bed of cabbage, then save room for a dessert of Guinness creme brulee with oatmeal biscuits.
Zak’s Restaurant is located in an intimate space at the back of the hotel that includes a bar. When the weather is nice, guests can enjoy a rink out on the back patio while enjoying the view.
